Aboki&Co.
Members OnlyPepper, smoke, and ceremony — delivered in a paper sleeve, signed by the house.
A short note before the menu.
Suya was the smell on our streets before it was a word in our mouths. The man with the knife. The brazier. The newspaper twist. The squeeze of lime. A thing eaten standing up, after dark, with your hands.
Somewhere along the way, suya travelled. It went to London in suitcases. It went to Los Angeles in WhatsApp recipes. And in all of that travelling, a lot of it got quieter. Thinner. Less itself.
“We started Aboki & Co. to give it back its volume.”
This is not a fast-food brand. It is suya, made with the yaji that the mallams in Suleja and Kaduna would still recognise, and treated with the same care a good restaurant gives a steak. We hand-cut the meat. We rest the yaji overnight. We tuck a sachet, a sauce cup, and a sleeve of chips beside it — wrapped in the Mallam Gazette. First the suya. Then the news.
Three cities. Three doors. There will be more.
Three doors, quietly opening.
Three small dining rooms, opening in sequence. Brick, brass, low light, a real brazier in each corner. Founding members are seated first — and the founding hundred get their card at the door.
Los Angeles
The first room. A small counter-only space on a quiet block downtown. The first Mallam Gazette press lives here. Founding members will be seated first.
Lagos
Coming home. Forty seats around a real brazier. A second Gazette press, a Lagos edition, and a wall of every issue printed since LA opened.
London
A converted print works east of the city. Concrete floor, brick walls, the same brazier. The third press, the third edition, the third door.
A newspaper, folded around the meat.
Every order arrives wrapped in a small newspaper of our own making. A masthead. Two stories from the city you're in. A heat forecast, a recipe corner, and a few classifieds we wrote ourselves.
The Gazette is printed on food-safe paper, distributed in every Aboki & Co. box, and renewed monthly. Each city gets its own edition. We feature one musician, one artist, one designer, one quiet revolution per month.
Read it before you eat. Keep it if it's good.
